Carter 2018. This cider is all about a small orchard, dating back hundreds of years, that the makers of Find & Foster (Polly & Mat) fostered. It still stands because the owners – the Carter family – cared for it when all of the orchards around them were torn out. Planted with beautiful old culinary, dessert & multipurpose apple varieties that are perfect for methode traditionelle cider; producing a vinous profile, & an elegant nose, that allows the subtle aromas that arise from lees ageing on champagne yeast for 18 months to shine. A fresh acidity gives the cider liveliness & length. With subtle notes of pear, green apple, wet stone & sea spray.
