Description
Genever Red. The base beer is made with all German malt and hops. A local ale yeast fermented the beer in the barrel at high temperatures, and then Donzoko’s house acid culture and brettanomyces were introduced. Over 12 months of subsequent ageing in a French Limousin Oak cask (previously containing barrel aged Genever – a juniper flavoured malt spirit) and the fermentation esters have rounded into deep red fruit flavours, with hints of juniper and resin from the barrel, and a pleasant acidity.
