Le Temps Fait Tout Blanc 2019. The wine that brought Remi to the world – one of the first natural wines by the glass at Noma back in the day. A blend of majority Ugni Blanc with Viognier, Clairette & Bourbelenc. The Viognier is macerated for ten days whole bunch to pair back it’s aromatics and bring structure. The rest of the grapes are direct pressed and aged in fibreglass tanks for around 18 months before assemblage. The wine then rests in bottle for around a year. After a little air this unfurls into delicious textural wine packed with orchard fruit, elderflower and minerals.
