Papaya and pineapple punch, passionfruit martinis and mezcal margaritas fall into an undercurrent of grapefruit fizz, forest spruce, medical-grade herbaceousness and a sliver of floral habanero, before riding a sugar wave of melon sorbet, mango lassi, strawberry jam and peaches in syrup. A finishing touch of lactose adds creaminess, depth, and brings it all together like the clotted cream on a perfectly-served scone.
