Fermented using non-selected, wild, yeast – whole berry in stainless. Mature in 85% neutral French oak puncheons and 15% clay amphora for 6 months

32 days skin contact

Full malolactic fermentation.

Matured 6 months in the oak and clay vessels, 2 months stainless steel.

Bottled without fining or filtration.

Vegan friendly and bone dry.
