Description

Today is our first spontaneously fermented beer. The wort was produced using the traditional turbid mash method, with a grist of malted barley, raw wheat and rye. It was left in our coolship over night to be inoculated with wild yeast and bacteria, before being transferred to wood. Today is a blend of three barrels from two brews produced in the winter of 2016.
