Brouwerij De Sint-Sixtusabdij van Westvleteren. The history of St Sixtus Abbey begins when a few monks from the French abbey Mont-des-Cats joined the recluse in 1831. In addition to their monastic activities, the monks tilled the fields around the abbey, made cheese …, to provide for themselves. Quite early on, beer was also brewed on a very small scale, not for sale but for own consumption. The cash book of the Sint-Sixtus abbey shows that in June 1838 the first editions were made for a brewery.
