Dr Todd. A beer inspired by a cocktail. Australian bartender Sam Ross created several enduring drink recipes whilst at Milk & Honey in New York, most famously the Penicillin Cocktail: a smoky, spicy mix of Scotch, honey and ginger and lemon. We have deconstructed these ingredients from the cocktail and put them all together to brew a beer we have been wanting to make for a very long time.

Dr Todd is our riff on the Penicillin cocktail. The end result is an Islay Whisky Barrel-aged, strong citrus sour. It’s been brewed with ginger, some lactose sugar and aged in barrels with British Black Bee honey and finished with more ginger and lemon zest. The Penicillin was inspired by the Hot Toddy, invented by the revered Dr Robert Bentley Todd.
