Castlings Heath Cider Barrel 1 2018. Traditional East Anglian cider has always been made from sweet and sharp apples. We have now been making this cider for over 30 years. Over this period some of our methods have changed, but it still only has one ingredient: organic apples. These are pressed in the autumn, put into wooden whisky barrels and allowed to ferment, using only the wild yeasts present on the apple skins. When the fermentation has finished we have a really fresh, dry and slightly sharp cider which then continues to mature over the winter months, taking on some interesting oak flavours.
