Redwood 2016. Every autumn the hedgerows around the brewery are heavy with berries; sloes, blackberries, elderberries, rosehips among many others. It seemed only natural to go out and pick them to age with a beer. In the heart of autumn each year we release Redwood, an annual release to celebrate the previous year’s hedgerow vintage. Redwood is left to mature on the late summer foraged fruit for a full year in various oak barrels, gaining tart berry sweetness and building a complex funky character. This allows the wild yeast in our barrels to really work on those fruits leaving Redwood dry, tart and tannic rather than sickeningly sweet. The combination of Whisky, Bourbon and Burgundy red wine barrels – including those taken from our Modus Operandi blending program – lend a depth of vanilla and vinous flavour. The rich wood character and complementing tart fruits make Redwood 2016 as complex as it is intriguing. Redwood 2016
