De Cam
The Oude De Cam is an old farm-brewery of the former lords of Gooik. In the nineties of the twentieth century, a community center was established here, including a folk café and a musical instrument museum. Willem Van Herreweghen, son of the poet Hubert and at that time production director at Palm, set up a geuze stud in the outbuildings here in 1992. In 1997 the first locally docked geuze was presented. Wort is purchased from lambic breweries Boon, Girardin and Lindemans. This undergoes a spontaneous fermentation in Gooik. The young lambic thus obtained further ripens in barrels from Pilsner Urquell. The lambic is then assembled at different ages, after which the beer is fermented in the bottle for at least another year. The slow, traditional, production method produces 100 hectoliters of Oude Geuze and Oude Kriek annually.
