Lambic

Lambic is a traditional Belgian beer that is famous for its unique fermentation process, where wild yeasts and bacteria from the environment naturally ferment the beer, rather than using cultivated yeast strains. This results in a distinctive, sour, and complex flavour profile. These flavours can range from mildly tart to intensely sour, with earthy, funky notes from the wild yeast, along with fruity, apple-like or citrus characteristics. Many Lambics are aged for extended periods, and they are often blended to create different variations, such as Gueuze (a blend of young and old Lambics), or flavored with fruits like cherries (Kriek) or raspberries (Framboise).
